1. Roasted Veggie and Quinoa Salad

Ingredients:

1 cup cooked quinoa

1 zucchini, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1/2 red onion, diced

2 tbsp olive oil

Salt and pepper, to taste

1 tbsp balsamic vinegar

Instructions:

Preheat oven to 425°F.

1 spaghetti squash

Instructions:

Preheat oven to 400°F.

Cut spaghetti squash in half lengthwise and scoop out the seeds.

Place the squash halves cut-side down on a baking sheet and roast for 40-45 minutes or until tender.

While the squash is roasting, toss cherry tomatoes and minced garlic in olive oil, salt, and pepper and spread out on a separate baking sheet.

Roast for 20-25 minutes or until tomatoes are tender and starting to burst.

Scrape the spaghetti squash flesh out of the skin with a fork and transfer to a large bowl.

Top with roasted tomatoes and garlic and sprinkle with chopped basil.

3. Lentil and Vegetable Stir-Fry

Ingredients:

1 cup cooked lentils

1 zucchini, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1/2 red onion, sliced

2 cloves garlic, minced

2 tbsp olive oil

Salt and pepper, to taste

2 tbsp low-sodium soy sauce

Instructions:

Heat olive oil in a large skillet over medium-high heat.

Add sliced vegetables and minced garlic to the skillet and stir-fry for 5-7 minutes or until vegetables are tender.

Add cooked lentils and soy sauce to the skillet and stir to combine.
